Ingredients
Scale
Base
- 85g shredded wheat, crushed
- 200g pistachios, chopped
- 50ml honey (from the total 100g)
- Juice of ½ orange
Cream Topping
- 300ml pot double cream
- ½ x 250g pot Greek yogurt (125g)
- 50ml honey (remaining from total 100g)
- 2 tsp rosewater
Garnish
- 110g pot pomegranate seeds
Instructions
- Prepare the base: In a mixing bowl, combine the crushed shredded wheat, chopped pistachios, 50ml honey, and the juice of half an orange. Mix thoroughly to incorporate all ingredients evenly. Once mixed, divide this mixture evenly among 8 small glasses or teacups to form the crunchy base layer.
- Whip the cream: In a separate bowl, whip the double cream until it reaches a very soft peak consistency, ensuring it is smooth and airy but not too stiff.
- Fold in yogurt and flavorings: Gently fold the Greek yogurt, remaining 50ml honey, and 2 teaspoons of rosewater into the whipped cream. Mix carefully to maintain the light texture of the whipped cream while evenly distributing the ingredients.
- Assemble the pots: Spoon the cream and yogurt mixture evenly over the prepared base in each glass, creating a layered dessert.
- Chill: Place the pots in the refrigerator and chill for at least 2 hours, allowing the flavors to meld and the cream to set. They can be chilled for up to 24 hours in advance.
- Add garnish and serve: Just before serving, sprinkle the pomegranate seeds on top of each pot to add a fresh, juicy burst of flavor and a pop of color.
Notes
- For best texture, use freshly whipped cream with soft peaks to ensure a light and airy topping.
- Chilling time can be extended up to 24 hours to enhance flavors and set the dessert firmly.
- Rosewater adds a floral aroma; adjust quantity to taste.
- Use good quality Greek yogurt for creaminess and tang.
- Substitute pistachios with walnuts or almonds if preferred.
