- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt to taste

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s at the right temperature for baking the chicken and vegetables evenly.
- Prepare Marinade: In a large mixing bowl, combine honey, Dijon mustard, olive oil, garlic powder, onion powder, dried thyme, salt, and pepper. Mix well to create a flavorful marinade.
- Marinate Chicken: Add the chicken thighs into the marinade and thoroughly coat each piece. Allow the chicken to marinate for at least 10 minutes to absorb the flavors.
- Prepare Vegetables and Beans: In a baking dish or large skillet, add the diced potatoes and the drained, rinsed mixed beans. Drizzle with olive oil and season with salt and pepper to taste.
- Arrange Chicken: Place the marinated chicken thighs on top of the potato and bean mixture evenly in the baking dish.
- Add Remaining Marinade: Pour any leftover marinade over the chicken and vegetables to enhance the flavor throughout.
- Cover and Bake: Cover the dish tightly with aluminum foil and bake in the preheated oven for 25 minutes to cook the ingredients gently.
