Description

A deliciously easy Honey Mustard Chicken baked with hearty potatoes and mixed beans, offering a perfect balance of sweet and tangy flavors in a wholesome meal.

Ingredients

Scale

Chicken

  • 4 pieces chicken thighs (Approx. 1.5 lbs)

Vegetables and Beans

  • 4 medium potatoes (Approx. 2 lbs, diced into 1-inch pieces)
  • 1 can mixed beans (15 oz, drained and rinsed)

Marinade

  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Garnish

  • Fresh parsley (Optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s at the right temperature for baking the chicken and vegetables evenly.
  2. Prepare Marinade: In a large mixing bowl, combine honey, Dijon mustard, olive oil, garlic powder, onion powder, dried thyme, salt, and pepper. Mix well to create a flavorful marinade.
  3. Marinate Chicken: Add the chicken thighs into the marinade and thoroughly coat each piece. Allow the chicken to marinate for at least 10 minutes to absorb the flavors.
  4. Prepare Vegetables and Beans: In a baking dish or large skillet, add the diced potatoes and the drained, rinsed mixed beans. Drizzle with olive oil and season with salt and pepper to taste.
  5. Arrange Chicken: Place the marinated chicken thighs on top of the potato and bean mixture evenly in the baking dish.
  6. Add Remaining Marinade: Pour any leftover marinade over the chicken and vegetables to enhance the flavor throughout.
  7. Cover and Bake: Cover the dish tightly with aluminum foil and bake in the preheated oven for 25 minutes to cook the ingredients gently.
  8. Uncover and Continue Baking: Remove the foil and bake for an additional 20 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C) with a nicely browned surface.
  9. Rest and Serve: Take the dish out of the oven and let it rest for 5 minutes. Garnish with fresh parsley, if desired, before serving to add a fresh touch.

Notes

  • Marinate the chicken longer, up to 2 hours, for deeper flavor.
  • Use bone-in chicken thighs for juicier meat, but boneless can also be used.
  • Adjust seasoning and spice levels based on preference.
  • Make sure potatoes are diced evenly for uniform cooking.
  • Check chicken internal temperature with a meat thermometer to ensure safety.
  • Fresh parsley garnish adds color and a subtle herbaceous flavor but can be omitted.
