Instructions

  1. Prepare the Meat: In a large mixing bowl, place the 5 lbs. of ground turkey. Make sure the turkey is cold to ensure better texture and easier mixing.
  2. Add Seasoning: Add 1.6 oz. of mild Italian sausage seasoning and, if desired, crushed red pepper flakes to taste. Mix thoroughly with your hands or a spatula until the seasoning is evenly distributed throughout the meat.
  3. Prepare Sausage Stuffer: Attach a sausage stuffer to your mixing bowl or set up a standalone sausage stuffer. Make sure the equipment is clean and ready for use.
  4. Stuff Casings: Load the sausage mixture into the stuffer and stuff the mixture into collagen casings. Carefully fill the casings, avoiding air pockets, and create links of desired length by twisting the casing between links.
