- Combine dry ingredients: In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until fully incorporated.
- Melt butter: Melt the 4 tablespoons of salted butter and allow it to cool slightly to a warm temperature to avoid cooking the eggs in the next step.
- Mix wet and dry ingredients: Make a well in the center of the dry mixture and add the milk, egg, vanilla extract, honey, and melted butter.
- Whisk batter: Use a wire whisk to gently combine all ingredients. Be careful not to overmix; the batter should be thick but pourable. Add a small splash of milk if the batter is too thick.
- Preheat skillet: Heat a nonstick skillet or griddle over medium heat. Once hot, reduce the heat to medium-low and let it rest for about 1 minute.
