Burgers

  • 1 tbsp olive oil, plus extra for drizzling
  • 1 red onion, finely chopped
  • 500g lean minced beef or turkey
  • 1 egg
  • 12 cream crackers, bashed to fine crumbs
  • 2 tsp chilli paste
  • 2 tsp garlic paste
  • 1 tsp tomato ketchup
  • 1 tsp brown sauce
  • 2 tbsp plain flour
  • 6 hamburger rolls, toasted, to serve
  • Toppings of your choice (relish, chutney, salad), to serve

Sweet Potato Wedges

  • 4 sweet potatoes, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to season

Instructions

  1. Prepare the onion: Heat 1 tablespoon of olive oil in a frying pan over medium heat, then add the finely chopped red onion. Fry the onion for about 5 minutes or until soft and translucent. Remove from heat and allow it to cool slightly.
  2. Make the burger mixture: Once the onion has cooled, transfer it to a large bowl and add the lean minced beef or turkey, egg, finely crushed cream crackers, chilli paste, garlic paste, tomato ketchup, and brown sauce. Mix well with your hands or a spoon until all ingredients are thoroughly combined.
  3. Shape the burgers: Divide the mixture into six equal portions. Roll each portion into a ball, then flatten into thick, round patties to form the burgers.
  4. Coat with flour and chill: Spread plain flour on a plate and lightly coat each burger on both sides. Place the floured burgers on a baking tray, cover with cling film, and refrigerate for a couple of hours to help them set and hold their shape during cooking.
  5. Preheat the oven and prepare sweet potato wedges: Preheat your oven to 200°C (180°C fan)/gas mark 6. On a baking tray, spread out the sweet potato wedges. Drizzle with 2 tablespoons of olive oil, sprinkle with paprika, and season with salt and pepper. Toss the wedges well to ensure they are evenly coated.
  6. Roast sweet potato wedges: Place the tray of sweet potato wedges in the oven and roast for 30 to 40 minutes, depending on how crisp you like them. Shake or turn the wedges a couple of times during roasting to allow even cooking.
  7. Cook the burgers alongside the wedges: After the wedges have been roasting for 10 minutes, drizzle the burgers with a little olive oil and place them on a separate baking tray. Put the burgers into the oven alongside the wedges to cook for the remaining 20 to 30 minutes. Flip the burgers halfway through cooking to ensure even browning.
  8. Assemble and serve: Once cooked, serve the hot burgers in toasted hamburger rolls with your choice of toppings such as relish, chutney, and salad. Accompany the burgers with a generous helping of the roasted sweet potato wedges on the side for a complete meal.
