- Small handful of parsley, chopped
- ½ lemon, zested and juiced
Instructions
- Prepare the herbs and cucumbers: Chop the mint, dill, and parsley finely. Use a vegetable peeler to create thin ribbons from the cucumbers.
- Warm the mint in oil: Heat the olive oil in a large saucepan over medium heat. Add the chopped mint and cook for about 1 minute, allowing the aroma to release.
- Cook the cucumber ribbons: Gently stir in the cucumber ribbons into the saucepan. Toss them carefully and cook for 2-3 minutes until they are warmed but still retain some crunch.
- Combine with fresh herbs and lemon: Remove the saucepan from heat. Toss the cucumbers with the chopped dill, parsley, and a drizzle of the lemon juice.
- Serve and garnish: Transfer the herby cucumbers onto a platter. Drizzle with additional lemon juice if desired and sprinkle with the lemon zest to finish.
