Description

A wholesome and flavorful Healthy Taco Bowl recipe featuring seasoned ground beef, fresh vegetables, and a zesty yogurt lime crema. Perfect for a nutritious, low-carb meal packed with vibrant Mexican-inspired flavors.

Ingredients

Scale

Ground Beef Mixture

  • 2 lbs 80/20 ground beef (or any ground meat)
  • 1 large onion, chopped
  • 3 cloves garlic, finely chopped
  • 2 tbsp olive oil
  • 68 tbsp Easy Homemade Taco Seasoning
  • Salt as needed

Vegetables & Toppings

  • 1 head iceberg lettuce
  • Tomatoes, cut into pieces
  • Lena’s Kitchen Pickled Onions
  • Cilantro, chopped
  • Radishes, sliced

Yogurt Lime Crema

  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 lime, juiced
  • 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 12 tbsp water (to thin out the sauce)

Instructions

  1. Prepare the Yogurt Lime Crema: In a bowl, combine the Greek yogurt or sour cream, lime juice, sea salt, garlic powder, and 1-2 tablespoons of water. Whisk thoroughly until smooth and creamy. Set aside to allow flavors to meld while you prepare the rest of the dish.
  2. Sauté Onions: Heat 2 tablespoons of olive oil in a large frying pan over medium heat. Add the chopped onion and sauté for 5-7 minutes until soft and translucent.
  3. Add Garlic: Stir in the finely chopped garlic and cook for an additional 1 minute, allowing the aroma to develop without burning.
  4. Cook Ground Beef: Add the ground beef to the pan, breaking it apart with a spatula. Cook for about 7 minutes or until no pink meat remains, stirring occasionally to ensure even cooking.
  5. Season the Meat: Sprinkle 6-8 tablespoons of Easy Homemade Taco Seasoning over the cooked beef. Mix well and cook for another 3 minutes to fully blend the flavors.
  6. Assemble the Taco Bowls: Cut the head of iceberg lettuce into wedges and place on serving plates. Top each with the seasoned meat mixture. Garnish with chopped tomatoes, sliced radishes, cilantro, and Lena’s Kitchen Pickled Onions.
  7. Finish with Crema: Drizzle the prepared Yogurt Lime Crema over the assembled bowls. Optionally, sprinkle an extra pinch of taco seasoning on top for added flavor. Serve immediately and enjoy a fresh, healthy meal.

Notes

  • You can substitute ground beef with ground turkey, chicken, or plant-based meat alternatives to fit dietary preferences.
  • Adjust the amount of taco seasoning based on your spice tolerance and flavor preference.
  • Lime crema can be prepared ahead of time and refrigerated for up to 2 days.
  • For a lower-fat option, use plain non-fat Greek yogurt instead of sour cream.
  • The iceberg lettuce provides a crunchy, low-carb base, but romaine or mixed greens can be used as alternatives.
