Instructions

  1. Preheat the oven: Set your oven to 350 degrees F (180 degrees C) to prepare for baking the assembled croissants later.
  2. Whisk eggs: In a large bowl, whisk together 4 of the small eggs until fully combined.
  3. Season eggs: Add salt and black pepper to taste and mix well.
  4. Preheat skillet: Warm a medium skillet over medium heat to cook the eggs.
  5. Cook eggs: Pour the whisked eggs into the skillet. Cook until firm enough to flip, then divide the eggs into two portions and flip each to cook the other side. Fold each portion into a roughly square shape by folding in half twice.
  6. Repeat egg cooking: Repeat the whisking, seasoning, and cooking steps with the remaining 4 eggs to create two more folded egg squares.
  7. Assemble croissants: Slice each croissant horizontally. On the bottom half, layer one slice of ham, one folded egg portion, and one slice of cheese. Top with the other half of the croissant.
  8. Prepare baking sheet: Line a baking sheet with parchment paper and place the assembled croissants on it.
  9. Bake croissants: Put the baking sheet in the preheated oven. Bake until the cheese is melted and the ham is warmed through, about 8-10 minutes.
