Pork Souvlaki

Yogurt Sauce

  • 100ml fat-free yogurt
  • 1 small garlic clove, grated
  • ½ cucumber, trimmed and grated
  • Salt, to taste

To Serve

  • 2 red peppers, deseeded and cut into chunks
  • 2 Little Gem lettuce, leaves separated
  • Chilli sauce, to serve (optional)
  • Flatbreads, warmed, to serve (optional)

Instructions

  1. Marinate the Pork: In a large bowl, combine the pork chunks with olive oil, dried oregano, lemon zest and juice, hot paprika, and a good pinch of salt. Toss thoroughly to coat all pieces evenly. Cover and allow to marinate for 10 minutes to infuse flavors.
  2. Prepare the Yogurt Sauce: In a separate bowl, mix together the fat-free yogurt, grated garlic, and grated cucumber. Season with salt according to taste. Set aside to let the flavors meld.
  3. Preheat the Grill: Heat your grill to a high temperature to ensure proper cooking and a nice char on the meat.
  4. Assemble the Skewers: Alternately thread the marinated pork chunks and red pepper pieces onto four metal skewers. Make sure to distribute ingredients evenly for consistent cooking.
  5. Grill the Souvlaki: Place the skewers on a non-stick baking sheet and grill for 3-4 minutes on each side. Cook until the pork is thoroughly done and golden brown, and the peppers are slightly charred.
