Pork Souvlaki
- 400g lean pork shoulder, cut into 2cm chunks
- 1 tbsp olive oil
- ½ tbsp dried oregano
- 1 lemon, zested and juiced
- ½ tsp hot paprika
- Salt, to taste
Yogurt Sauce
- 100ml fat-free yogurt
- 1 small garlic clove, grated
- ½ cucumber, trimmed and grated
- Salt, to taste
To Serve
- 2 red peppers, deseeded and cut into chunks
- 2 Little Gem lettuce, leaves separated
- Chilli sauce, to serve (optional)
- Flatbreads, warmed, to serve (optional)
Instructions
- Marinate the Pork: In a large bowl, combine the pork chunks with olive oil, dried oregano, lemon zest and juice, hot paprika, and a good pinch of salt. Toss thoroughly to coat all pieces evenly. Cover and allow to marinate for 10 minutes to infuse flavors.
- Prepare the Yogurt Sauce: In a separate bowl, mix together the fat-free yogurt, grated garlic, and grated cucumber. Season with salt according to taste. Set aside to let the flavors meld.
- Preheat the Grill: Heat your grill to a high temperature to ensure proper cooking and a nice char on the meat.
- Assemble the Skewers: Alternately thread the marinated pork chunks and red pepper pieces onto four metal skewers. Make sure to distribute ingredients evenly for consistent cooking.
- Grill the Souvlaki: Place the skewers on a non-stick baking sheet and grill for 3-4 minutes on each side. Cook until the pork is thoroughly done and golden brown, and the peppers are slightly charred.
- Serve: Arrange the cooked skewers with separated Little Gem lettuce leaves, a generous dollop of the yogurt sauce, and optional chilli sauce. Serve alongside warmed flatbreads if desired for a complete meal.

- For best flavor, do not skip marinating the pork even if short on time.
- Metal skewers heat up quickly and cook meat faster; if using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
- You can substitute fat-free yogurt with Greek yogurt for a creamier sauce.
- Adjust the level of hot paprika and chilli sauce according to your spice tolerance.
- Flatbreads can be warmed in a dry skillet or oven for a few minutes before serving.
