Beef and Marinade
- 1 1/2 lbs petite sirloin beef, cut into 1 inch cubes
- 2 teaspoons black pepper
- 1 tablespoon coarse salt
- 1 1/2 teaspoons brown sugar
- 2 tablespoons olive oil
- 1/4 teaspoon sesame oil
- 1/2 teaspoon red wine vinegar
- 1 tablespoon gluten-free soy sauce
- 1 tablespoon whole grain mustard

- 1 large yellow onion, halved and quartered into large chunks
- 1 green bell pepper, cut into large chunks
- 1 orange bell pepper, cut into large chunks
- 1 red bell pepper, cut into large chunks
- 1 pineapple, outside removed and cut into large chunks
Instructions
- Make the marinade: In a large plastic bag, add the beef cubes along with salt and black pepper. Toss well until the meat is evenly coated. Add the brown sugar, olive oil, sesame oil, red wine vinegar, gluten-free soy sauce, and whole grain mustard to the bag. Mix thoroughly so that all the beef pieces are coated with the marinade. Seal the bag and refrigerate for at least 30 minutes, ideally for 4 hours, to allow the flavors to penetrate.
- Prepare the grill: Preheat your outdoor grill to medium-high heat. If using an indoor grill pan, heat it over medium-high heat to get it ready for cooking the kabobs.
- Soak skewers and prep beef: Soak kabob skewers in water for 30 minutes to prevent burning during grilling. Remove the beef from the marinade, shaking off any excess liquid, but reserve the marinade for later use.
- Assemble the kabobs: Thread the beef cubes alternately with large chunks of yellow onion, green bell pepper, orange bell pepper, red bell pepper, and pineapple onto the skewers. Arrange as desired to balance flavors and colors.
- Grill the kabobs: Place the assembled kabobs onto the preheated grill. Brush the tops with some of the reserved marinade. Cover the grill and cook for 5 minutes. After 5 minutes, carefully flip the kabobs and brush the other side with the remaining marinade. Cover and cook for another 5 minutes for medium-rare beef, or continue cooking to your preferred level of doneness.
Notes
- For best flavor, marinate the beef for at least 4 hours or overnight if possible.
- Soaking wooden skewers prevents them from burning on the grill.
- You can substitute petite sirloin with sirloin tip or top round if preferred.
- If grilling indoors, a grill pan or broiler works well.
- Be careful not to overcook the beef; medium-rare keeps it juicy and tender.
