Ingredients
Scale
Gluten-Free Pasta
- 12 oz gluten-free pasta (such as penne or fettuccine)
Sauce
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt, to taste
- Ground black pepper, to taste
Garnish
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta: In a large pot, bring water to a boil. Add a generous pinch of salt and then the gluten-free pasta. Cook according to package instructions until al dente. Drain the pasta in a colander and set aside.
- Sauté garlic and red pepper flakes: In the same pot or a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes, or until fragrant. Be careful not to let the garlic burn.
- Add heavy cream: Lower the heat and add the heavy cream to the skillet. Stir and bring the mixture to a simmer.
- Make the Parmesan sauce: Add the grated Parmesan cheese to the cream mixture, stirring continuously until the cheese is melted and the sauce is creamy. Season with salt and black pepper to taste.
- Toss pasta in sauce: Add the cooked gluten-free pasta to the skillet, tossing to coat the pasta evenly in the garlic Parmesan sauce. Allow it to heat through for an additional 2-3 minutes.
- Serve: Serve immediately, garnished with chopped fresh parsley.
Notes
- Be careful not to overcook the garlic as it can become bitter.
- Use freshly grated Parmesan for the best flavor and smooth texture in the sauce.
- If the sauce is too thick, add a splash of pasta cooking water to loosen it.
- Red pepper flakes are optional, adjust quantity to taste for desired spiciness.
- This dish pairs well with a simple green salad or steamed vegetables.
