Ingredients
Scale
Main Ingredients
- 1 tablespoon sesame oil
- 1 pound lean ground pork
- 1 red bell pepper, diced
- 6 garlic cloves, minced
- 2 tablespoons minced ginger
- 3 tablespoons brown sugar
- 3 green onions, thinly sliced
- 14 ounces rice noodles
- 1 cup reserved pasta water
- ¼ cup peanut butter
- ⅓ cup soy sauce
- 2 tablespoons chili garlic sauce
- 1 tablespoon rice wine vinegar
- 1 cup chicken broth (more or less to taste)
Instructions
- Cook the Pork and Vegetables: Heat sesame oil in a large skillet over medium-high heat. Add the ground pork and diced red bell pepper. Cook, breaking the pork apart, until the meat is browned and vegetables are tender, about 4 to 6 minutes.
- Add Aromatics and Flavorings: Reduce heat to low. Stir in the minced garlic, minced ginger, brown sugar, and sliced green onions until everything is well combined and fragrant.
- Prepare the Rice Noodles: Bring a pot of water to a boil. Cook the rice noodles according to the package instructions until al dente. Drain the noodles, reserving 1 cup of the pasta water for the sauce.
- Make the Peanut Sauce: Add the reserved pasta water, peanut butter, soy sauce, chili garlic sauce, and rice wine vinegar directly to the cooked pork mixture. Stir continuously until a smooth sauce forms, coating the pork evenly.
- Toss Noodles with Sauce: Add the cooked rice noodles to the skillet. Toss everything together to combine. Gradually add chicken broth as needed to thin the sauce to your preferred consistency.
- Garnish and Serve: Serve hot, garnished with extra sliced green onions, chopped peanuts, or fresh cilantro based on your preference for added texture and flavor.
Notes
- Use lean ground pork to reduce excess fat and keep the dish light.
- Adjust chili garlic sauce quantity to modify the spice level to your taste.
- If peanut butter is too thick, warm it slightly before mixing to achieve a smoother sauce.
- Chicken broth can be substituted with vegetable broth for a slightly different flavor or vegetarian adaptation.
- Additional toppings like crushed peanuts or cilantro brighten up the dish and add texture.
- Rice noodles can be soaked in hot water instead of boiled to prevent overcooking and maintain their texture.
