Description

These Garlic Pork Peanut Noodles combine savory ground pork, crunchy red bell peppers, and a rich, creamy peanut sauce with a hint of spice and sweetness. Perfectly cooked rice noodles are tossed in a flavorful mixture of sesame oil, garlic, ginger, soy sauce, and chili garlic sauce, delivering a satisfying and easy one-pan meal that’s ready in under 30 minutes.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon sesame oil
  • 1 pound lean ground pork
  • 1 red bell pepper, diced
  • 6 garlic cloves, minced
  • 2 tablespoons minced ginger
  • 3 tablespoons brown sugar
  • 3 green onions, thinly sliced
  • 14 ounces rice noodles
  • 1 cup reserved pasta water
  • ¼ cup peanut butter
  • ⅓ cup soy sauce
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon rice wine vinegar
  • 1 cup chicken broth (more or less to taste)

Instructions

  1. Cook the Pork and Vegetables: Heat sesame oil in a large skillet over medium-high heat. Add the ground pork and diced red bell pepper. Cook, breaking the pork apart, until the meat is browned and vegetables are tender, about 4 to 6 minutes.
  2. Add Aromatics and Flavorings: Reduce heat to low. Stir in the minced garlic, minced ginger, brown sugar, and sliced green onions until everything is well combined and fragrant.
  3. Prepare the Rice Noodles: Bring a pot of water to a boil. Cook the rice noodles according to the package instructions until al dente. Drain the noodles, reserving 1 cup of the pasta water for the sauce.
  4. Make the Peanut Sauce: Add the reserved pasta water, peanut butter, soy sauce, chili garlic sauce, and rice wine vinegar directly to the cooked pork mixture. Stir continuously until a smooth sauce forms, coating the pork evenly.
  5. Toss Noodles with Sauce: Add the cooked rice noodles to the skillet. Toss everything together to combine. Gradually add chicken broth as needed to thin the sauce to your preferred consistency.
  6. Garnish and Serve: Serve hot, garnished with extra sliced green onions, chopped peanuts, or fresh cilantro based on your preference for added texture and flavor.

Notes

  • Use lean ground pork to reduce excess fat and keep the dish light.
  • Adjust chili garlic sauce quantity to modify the spice level to your taste.
  • If peanut butter is too thick, warm it slightly before mixing to achieve a smoother sauce.
  • Chicken broth can be substituted with vegetable broth for a slightly different flavor or vegetarian adaptation.
  • Additional toppings like crushed peanuts or cilantro brighten up the dish and add texture.
  • Rice noodles can be soaked in hot water instead of boiled to prevent overcooking and maintain their texture.
