  • ¾ teaspoon paprika
  • ¾ teaspoon brown sugar
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • ½ teaspoon mustard powder

  • ¾ cup dry white wine
  • 4 tablespoons butter
  • 4 cloves garlic, thinly sliced
  • 4 sprigs fresh thyme

Instructions

  1. Prepare Seasoning: Combine garlic powder, onion powder, paprika, brown sugar, pepper, chili powder, and mustard powder in a small bowl. Measure out the rest of the ingredients and set aside. For tenderness, cover the steak with plastic wrap and gently pound each side with a meat mallet.
  2. Cut and Season Steak: Cut the steak into 1-inch cubes and pat dry with paper towels. Sprinkle with salt to taste (up to 1½ teaspoons). Rub the seasoning mixture evenly over all sides of the steak cubes to infuse flavor.
  3. Sear the Steak: Heat 2-3 tablespoons olive oil in a large skillet over medium-high heat. Working in batches, sear the steak bites for about 1 minute per side (around 4 minutes per batch) until nicely browned but still medium-rare. Remove seared steak and set aside.
  4. Deglaze the Pan: Turn off the heat, then add the white wine to the skillet. Turn heat to medium and use a silicone spatula to scrape the browned bits from the bottom and sides, incorporating them into the sauce. Allow it to gently boil and reduce by half over about 6 minutes.
  5. Add Butter and Aromatics: Stir in the butter, sliced garlic, and fresh thyme sprigs. Let the sauce simmer gently for 3 minutes to infuse flavors.
  6. Finish Steak in Sauce: Lower heat to medium-low and return the steak bites along with any accumulated juices to the skillet. Spoon the sauce over the steak and cook for 2 to 3 minutes until heated through and cooked to your liking. Remove thyme sprigs and sprinkle chopped parsley on top.
  7. Serve: Serve steak bites as an appetizer with toothpicks or as a main course alongside mashed potatoes and roasted green beans.
