For the Soup:

  • 2 tbsp olive oil
  • 1 lb ground beef
  • 1 large sweet onion, diced to 1/2 inch
  • 2 cloves garlic, minced
  • 3 tbsp tomato paste
  • 2 large carrots, diced to 1/2 inch
  • 2 stalks celery, thinly sliced
  • 1 bell pepper, seeds and stem removed, diced to 1/2 inch
  • 12 oz Yukon Gold potato, diced to 1/2 inch
  • 1 14-oz can crushed tomatoes, fire-roasted preferred
  • 4 cups beef broth
  • 1 tsp kosher salt
  • 1 tsp ground pepper
  • 1 tbsp Italian seasoning
  • 1 bay leaf
  • 8 oz green beans, trimmed and chopped into bite-sized pieces

Instructions

  1. Brown ground beef. Heat a Dutch oven over medium-high heat. Add olive oil and ground beef. Saute until browned, breaking into pieces, about 6-7 minutes.
  2. Saute alliums. Add onion to the beef and saute until soft, about 6-7 minutes. Add garlic and cook for 1 minute more.
  3. Add tomato paste. Stir in tomato paste and cook for 2 minutes.
  4. Add remaining ingredients except green beans. Add carrots, celery, bell pepper, potatoes, crushed tomatoes, beef broth, salt, pepper, and Italian seasoning. Stir well and add bay leaf.
  5. Simmer. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.
  6. Add green beans and simmer. Stir in green beans and simmer for an additional 5 minutes.
  7. Season and serve. Adjust seasoning if needed, then ladle into bowls and serve.
