Description

This Easy Buffalo Chicken Dip is a creamy, spicy, and cheesy appetizer perfect for game days, parties, or casual gatherings. Made with shredded rotisserie chicken, cream cheese, Greek yogurt, and a blend of melted cheeses, it’s baked until bubbly and served warm with chips, veggies, or toasted baguette slices.

Ingredients

Scale

Main Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup Franks hot sauce
  • 1/2 cup plain Greek yogurt (can use sour cream)
  • 1/4 cup chopped green onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • 2 cups finely shredded rotisserie chicken or cooked chicken
  • Kosher salt and black pepper, to taste

Optional Toppings

  • Chopped green onion
  • Crumbled blue cheese
  • Fresh parsley

For Serving

  • Chips
  • Cut-up vegetables
  • Toasted baguette slices

Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 375°F. Lightly grease an 8×8-inch baking dish or an 8-inch cast iron skillet to prevent sticking, then set aside.
  2. Mix Base Ingredients: In a large bowl, combine softened cream cheese, Frank’s hot sauce, plain Greek yogurt, chopped green onion, garlic powder, and onion powder. Stir thoroughly until the mixture is smooth and well incorporated.
  3. Add Cheese and Chicken: Stir in half of the shredded mozzarella cheese and half of the shredded cheddar cheese along with the finely shredded rotisserie or cooked chicken. Season the mixture with kosher salt and black pepper to taste, blending evenly.
  4. Assemble for Baking: Spread the chicken and cheese mixture evenly into the prepared baking dish. Sprinkle the remaining mozzarella and cheddar cheese over the top for an extra cheesy finish.
  5. Bake the Dip: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the dip is hot, bubbly, and the cheese on top is perfectly melted and slightly golden.
  6. Garnish and Serve: Remove from the oven and garnish with additional chopped green onion, crumbled blue cheese, and fresh parsley if desired. Serve warm with your choice of chips, cut-up veggies, or toasted baguette slices for dipping.

Notes

  • For a creamier dip, use full-fat cream cheese and full-fat Greek yogurt or sour cream.
  • Adjust the amount of hot sauce based on your preferred level of spiciness.
  • Rotisserie chicken works well for ease, but any leftover cooked chicken can be used.
  • Blue cheese crumble is optional but adds a nice tangy contrast to the spicy dip.
  • The dip can be prepared ahead of time and baked just before serving.
