For the Kofta Burgers
- 1kg lamb mince
- 2 onions, coarsely grated
- 1 garlic bulb, broken into cloves and finely chopped or grated
- 6 tbsp garam masala
- bunch of coriander, chopped (optional)
- 1 tbsp chilli sauce, plus extra to serve
- salt, a good pinch
To Serve
- 8 pitta breads
- 4 tomatoes, halved and sliced
- half a red cabbage, shredded
- 1 red onion, sliced (optional)
- small pot of plain yogurt
Instructions
- Mix the ingredients: Tip the lamb mince into a large bowl along with the grated onions, chopped garlic, garam masala, chopped coriander if using, chilli sauce, and a good pinch of salt. Use your hands to thoroughly mix and squelch all the ingredients together until evenly combined.
- Form the burgers: Pat the mixture into 16 small burger-shaped patties. You can freeze these for up to 1 month or refrigerate them for up to one day ahead of cooking.
- Preheat the grill: Heat your grill to its highest setting, preparing a baking tray to hold the patties in a single layer. Depending on your tray size, you may need to cook in batches.
- Grill the kofta burgers: Place the patties on the tray and grill for 5-6 minutes on each side, or until they are browned and cooked through. Ensure the internal temperature reaches at least 71°C (160°F) for lamb.
- Prepare the accompaniments: While the burgers cook, slice the tomatoes, shred the cabbage, and slice the red onion if using. Warm the pitta breads if desired and have plain yogurt and extra chilli sauce ready for serving.
- Assemble and serve: Pile the cooked kofta burgers onto a platter alongside the vegetables, pitta breads, yogurt, and chilli sauce to let everyone build their own sandwiches.
