Description

Crispy and golden potato wedges roasted to perfection with olive oil and a hint of sea salt. These wedges are easy to make and can be enhanced with paprika for a smoky spice or topped with melted cheddar cheese for extra indulgence.

Potatoes

  • 3 large baking potatoes (around 1kg)

  • 100g grated cheddar cheese (optional, to sprinkle over wedges 5 mins before end of cooking)

Instructions

  1. Preheat Oven: Heat your oven to 200°C (180°C fan) or gas mark 6 to prepare for roasting the wedges.
  2. Boil Potatoes: Bring a large pan of lightly salted water to a boil. Meanwhile, cut the potatoes into chunky wedges. Boil the wedges in the water for 7 minutes to partially cook and soften them.
  3. Drain and Steam Dry: Drain the boiled potato wedges and leave them to steam dry for 5 minutes. This helps remove excess moisture for crispier roasting.
  4. Prepare Wedges for Roasting: Spread the wedges out on a large baking sheet or two smaller ones. Toss the wedges with 1 tablespoon of olive oil and 1 teaspoon of sea salt, ensuring they are evenly coated. Arrange them so they are not overlapping to allow even roasting.
  5. Roast Wedges: Place the baking sheet(s) in the preheated oven and roast for 30 minutes, turning the wedges halfway through the cooking time to ensure they become golden and crisp all over.
  6. Optional Flavors: For a smoky spice, sprinkle 2 teaspoons of hot smoked paprika over the wedges before roasting. To make cheesy wedges, sprinkle 100 grams of grated cheddar cheese over the wedges 5 minutes before the end of cooking and return to the oven to melt.
