Coating:
- 2 tbsp cornflour (cornstarch)
- 1/2 tsp salt (plus extra for sprinkling)
- 1/2 tsp red chili powder
- 1 tsp chaat masala
- 1/4 tsp dried mango powder (amchoor) (optional)
Other:
- Neutral oil (for deep frying)
- Fresh coriander (for garnish)
Instructions
- Prepare Potatoes: Wash, peel, and cut potatoes into fries. Soak in ice water, drain, and dry thoroughly.
- Coat Potatoes: Toss fries with cornflour and salt.
- First Fry: Fry potatoes at 160°C for 5 minutes, cool on a rack.
- Second Fry: Fry at 205°C until golden brown, season with spices.
- Serve: Enjoy hot with ketchup or mayonnaise.
