- 350g dried udon noodles
- 2 large carrots, peeled and cut into matchsticks
- 4 spring onions, shredded

- 1 small bunch coriander, sliced (optional)
Instructions
- Cook the turkey mince: Heat 1 tablespoon of sesame oil in a large non-stick frying pan over high heat until hot. Add the turkey mince and fry for 10-12 minutes, stirring and breaking up the meat with a wooden spoon, until it is golden brown and crispy.
- Add aromatics and sauces: Stir in the grated ginger and crushed garlic, cooking for 1 minute until fragrant. Then add the honey, soy sauce, and hot sriracha chili sauce. Cook for an additional 2 minutes to allow the flavors to combine and coat the turkey mince.
- Cook the noodles: Meanwhile, bring a large pot of water to a boil. Add the dried udon noodles and cook according to the package instructions until tender. Drain the noodles thoroughly.
- Toss noodles: Mix the drained noodles with the remaining 1 tablespoon of sesame oil and the juice of 2 limes to add a fresh, tangy flavor.
- Assemble the dish: Divide the noodles between serving bowls. Top each bowl with the crispy chili turkey mince, carrot matchsticks, shredded spring onions, and coriander if using. Serve with extra lime wedges for squeezing over as desired.

- You can adjust the amount of sriracha chilli sauce to control the heat level to your preference.
- Adding fresh coriander is optional but it adds a lovely herbaceous freshness to the dish.
