Stuffed Chicken:
- 4 large boneless, skinless chicken breasts

- 2 tsp salt, divided
- 1 tsp black pepper, divided
- 2 tbsp butter
- 1 tbsp olive oil
Creamy Spinach Rigatoni:
- 3 cups fresh spinach
- 2 tbsp unsalted butter
- 1 medium onion, finely diced
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 tbsp all-purpose flour
- 1/4 tsp ground nutmeg
- 1 1/2 tsp salt
- 8 oz rigatoni, cooked al dente
Instructions
- Prepare the Stuffed Chicken Breasts: Preheat the oven. Butterfly the chicken breasts. Season. Mix cream cheese with sun-dried tomatoes, parsley, salt, and pepper. Spread mixture in each breast. Sear and bake.
- Make the Creamy Spinach Rigatoni: Saute onion in butter. Add salt. Pour in cream, thicken with flour mixture. Add Parmesan, nutmeg, spinach. Simmer. Toss cooked rigatoni in sauce.
- Serve: Plate the creamy spinach rigatoni topped with stuffed chicken breasts. Serve hot.
