  • 3 cups fresh spinach
  • 2 tbsp unsalted butter
  • 1 medium onion, finely diced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tbsp all-purpose flour
  • 1/4 tsp ground nutmeg
  • 1 1/2 tsp salt
  • 8 oz rigatoni, cooked al dente

Instructions

  1. Prepare the Stuffed Chicken Breasts: Preheat the oven. Butterfly the chicken breasts. Season. Mix cream cheese with sun-dried tomatoes, parsley, salt, and pepper. Spread mixture in each breast. Sear and bake.
  2. Make the Creamy Spinach Rigatoni: Saute onion in butter. Add salt. Pour in cream, thicken with flour mixture. Add Parmesan, nutmeg, spinach. Simmer. Toss cooked rigatoni in sauce.
