Chipotle Chicken:
- 2 chicken breasts
- 2 tbsp olive oil
- 1 tsp chipotle chili powder
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1 tbsp lime juice
Honey Mango Dressing:
- 1 mango (peeled and chopped)
- 2 tbsp honey
- 1 tbsp white vinegar
- 2 tbsp lime juice
- 2 garlic cloves (peeled)
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/4 cup canola oil
Salad:
- 1 head romaine lettuce (chopped)
- 1 salad tomato (diced)
- 1 avocado (cubed)
- 1 cup corn (canned)
- 1/2 cup black beans (drained, rinsed)
- 1 red bell pepper (chopped)
- 1/2 English cucumber (peeled and chopped)
- 1 cup cheddar cheese (shredded)
- 1/4 red onion (sliced)
Instructions
- Chipotle Chicken: Mix together all the ingredients except for the chicken in a bowl. Add in the chicken breasts and cover them with the rub. Let the chicken sit for 30 minutes before cooking. Heat a non-stick skillet over medium-high heat. Cook the chicken for 4-5 minutes on one side until browned. Turn the chicken over, reduce the heat, and cook for another 6-7 minutes until fully cooked. Slice the chicken breasts.
- Honey Mango Dressing: Blend all ingredients except canola oil until smooth. Add canola oil and blend. Let it sit.
- Salad: Toss all chopped salad ingredients in a bowl. Divide into 4 bowls, top with chicken slices, and drizzle with dressing.
