Chipotle Chicken:

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp chipotle chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 tbsp lime juice

Honey Mango Dressing:

  • 1 mango (peeled and chopped)
  • 2 tbsp honey
  • 1 tbsp white vinegar
  • 2 tbsp lime juice
  • 2 garlic cloves (peeled)
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup canola oil

Salad:

  • 1 head romaine lettuce (chopped)
  • 1 salad tomato (diced)
  • 1 avocado (cubed)
  • 1 cup corn (canned)
  • 1/2 cup black beans (drained, rinsed)
  • 1 red bell pepper (chopped)
  • 1/2 English cucumber (peeled and chopped)
  • 1 cup cheddar cheese (shredded)
  • 1/4 red onion (sliced)

Instructions

  1. Chipotle Chicken: Mix together all the ingredients except for the chicken in a bowl. Add in the chicken breasts and cover them with the rub. Let the chicken sit for 30 minutes before cooking. Heat a non-stick skillet over medium-high heat. Cook the chicken for 4-5 minutes on one side until browned. Turn the chicken over, reduce the heat, and cook for another 6-7 minutes until fully cooked. Slice the chicken breasts.
  2. Honey Mango Dressing: Blend all ingredients except canola oil until smooth. Add canola oil and blend. Let it sit.
  3. Salad: Toss all chopped salad ingredients in a bowl. Divide into 4 bowls, top with chicken slices, and drizzle with dressing.
