  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • Cooked white rice, for serving
  • Sesame seeds, for garnish (optional)
  • Chopped green onions, for garnish (optional)

Instructions

  1. Prepare the Beef: Slice the flank steak thinly against the grain. In a medium bowl, combine the sliced beef with soy sauce, cornstarch, Shaoxing wine (or dry sherry), sesame oil, ground ginger, and white pepper. Marinate in the refrigerator for at least 20 minutes (up to 1 hour).
  2. Prepare the Broccoli: Cut the broccoli into florets. Blanch in boiling water for 2-3 minutes, then shock in ice water. Drain.
  3. Make the Sauce: Whisk together beef broth, soy sauce, oyster sauce, brown sugar, cornstarch, sesame oil, ginger, and white pepper. Set aside.
  4. Stir-Fry the Beef: Heat oil in a wok, stir-fry beef until cooked, then set aside.
  5. Stir-Fry the Aromatics: Add more oil, stir-fry garlic and ginger.
  6. Stir-Fry the Broccoli: Add broccoli to the wok and heat through.
  7. Add the Sauce: Pour sauce into the wok, simmer to thicken.
