  • 1/2 cup rolled oats

Wet Ingredients:

  • 14 oz can chickpeas, drained and rinsed
  • 1/2 cup tahini paste (runny)
  • 1 tbsp coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 oz dark chocolate, chopped

Instructions

  1. Prepare: Preheat the oven to 350°F/180°C. Line an 8×8-inch baking tin with parchment paper and grease any unlined sides.
  2. Grind oats: Place rolled oats in a food processor and grind into a fine flour.
  3. Add ingredients: Add chickpeas, tahini paste, maple syrup, coconut oil, vanilla extract, cinnamon, baking powder, baking soda, and salt. Process until smooth.
  4. Add chocolate: Mix in 3/4 of the chocolate chunks.
  5. Spread batter: Spread the mixture in the baking tin and top with remaining chocolate.
  6. Bake: Bake for 20 minutes until golden.
  7. Cool: Let the blondies cool before slicing.
