Dry Ingredients:
- 1/2 cup rolled oats
Wet Ingredients:
- 14 oz can chickpeas, drained and rinsed
- 1/2 cup tahini paste (runny)
- 1 tbsp coconut oil
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 oz dark chocolate, chopped
Instructions
- Prepare: Preheat the oven to 350°F/180°C. Line an 8×8-inch baking tin with parchment paper and grease any unlined sides.
- Grind oats: Place rolled oats in a food processor and grind into a fine flour.
- Add ingredients: Add chickpeas, tahini paste, maple syrup, coconut oil, vanilla extract, cinnamon, baking powder, baking soda, and salt. Process until smooth.
- Add chocolate: Mix in 3/4 of the chocolate chunks.
- Spread batter: Spread the mixture in the baking tin and top with remaining chocolate.
- Bake: Bake for 20 minutes until golden.
- Cool: Let the blondies cool before slicing.
