Description

This Chicken Spaghetti Lo Mein is a delicious and vibrant stir-fry featuring tender chicken breast, colorful vegetables, and perfectly cooked spaghetti tossed in a savory soy-based sauce. It’s a quick and satisfying meal combining the flavors of classic Chinese takeout with the comfort of spaghetti noodles.

Ingredients

Scale

Pasta

  • 8 oz spaghetti

Protein

  • 1 lb boneless, skinless chicken breast, sliced thinly

Vegetables

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 4 green onions, chopped
  • 3 cloves garlic, minced

Sauces & Oils

  • 1 tablespoon vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil

Seasonings & Garnish

  • Salt and pepper, to taste
  • Sesame seeds (optional)

Instructions

  1. Cook the spaghetti: Boil water in a large pot and cook the spaghetti according to the package instructions until al dente. Drain and set aside to keep warm.
  2. Heat the oil: In a wok or large skillet, heat the vegetable oil over medium-high heat until shimmering.
  3. Cook the chicken: Add the sliced chicken breast to the hot oil and stir-fry for about 5 to 7 minutes until the chicken is cooked through and lightly browned, stirring frequently to ensure even cooking.
  4. Sauté the garlic: Add the minced garlic to the chicken and sauté for another minute until fragrant, being careful not to burn it.
  5. Cook the vegetables: Add the sliced red and green bell peppers, julienned carrot, and broccoli florets to the wok. Stir-fry for 3 to 4 minutes until the vegetables are tender but still crisp.
  6. Prepare and add the sauce: In a small bowl, combine the soy sauce, oyster sauce (if using), and sesame oil. Pour the sauce mixture over the chicken and vegetables, stirring well to coat everything evenly.
  7. Toss the spaghetti: Add the cooked spaghetti to the wok and toss thoroughly with the chicken, vegetables, and sauce. Season with salt and pepper to taste.
  8. Garnish and serve: Remove from heat and sprinkle with chopped green onions and sesame seeds if desired. Serve immediately for best flavor and texture.

Notes

  • For gluten-free option, use gluten-free spaghetti and tamari instead of soy sauce.
  • Oyster sauce is optional but adds a deeper umami flavor.
  • Do not overcook the vegetables; they should remain crisp to add texture.
  • You can substitute chicken breast with tofu or shrimp for variation.
  • To reduce sodium, use low-sodium soy sauce and limit added salt.
