Protein
- 1 lb boneless, skinless chicken breast, sliced thinly
Vegetables
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 4 green onions, chopped
- 3 cloves garlic, minced
Sauces & Oils
- 1 tablespoon vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
Seasonings & Garnish
- Salt and pepper, to taste
- Sesame seeds (optional)
Instructions
- Cook the spaghetti: Boil water in a large pot and cook the spaghetti according to the package instructions until al dente. Drain and set aside to keep warm.
- Heat the oil: In a wok or large skillet, heat the vegetable oil over medium-high heat until shimmering.
- Cook the chicken: Add the sliced chicken breast to the hot oil and stir-fry for about 5 to 7 minutes until the chicken is cooked through and lightly browned, stirring frequently to ensure even cooking.
- Sauté the garlic: Add the minced garlic to the chicken and sauté for another minute until fragrant, being careful not to burn it.
- Cook the vegetables: Add the sliced red and green bell peppers, julienned carrot, and broccoli florets to the wok. Stir-fry for 3 to 4 minutes until the vegetables are tender but still crisp.
- Prepare and add the sauce: In a small bowl, combine the soy sauce, oyster sauce (if using), and sesame oil. Pour the sauce mixture over the chicken and vegetables, stirring well to coat everything evenly.
- Toss the spaghetti: Add the cooked spaghetti to the wok and toss thoroughly with the chicken, vegetables, and sauce. Season with salt and pepper to taste.
- Garnish and serve: Remove from heat and sprinkle with chopped green onions and sesame seeds if desired. Serve immediately for best flavor and texture.
Notes
- For gluten-free option, use gluten-free spaghetti and tamari instead of soy sauce.
- Oyster sauce is optional but adds a deeper umami flavor.
- Do not overcook the vegetables; they should remain crisp to add texture.
- You can substitute chicken breast with tofu or shrimp for variation.
- To reduce sodium, use low-sodium soy sauce and limit added salt.
