Marinade and Chicken
- 150ml 0% fat Greek yogurt
- 2 tbsp masala paste
- Handful of coriander leaves, chopped, plus extra leaves to serve
- Juice and zest of 1 lime, plus wedges to serve
- 4 skinless, boneless chicken breasts, each cut into 6 chunks
Salad
- 250g pack cherry tomatoes, hulled or quartered
- 1 red onion, finely chopped
- 1 cucumber, cut into chunks
To Serve
- Wholemeal chapatis, warmed
Instructions
- Prepare the Marinade: In a large bowl, combine the Greek yogurt, masala paste, half of the chopped coriander, half of the lime juice, and all of the lime zest. Mix well to form a smooth marinade.
- Marinate the Chicken: Add the chicken chunks to the marinade, stirring thoroughly to coat each piece evenly. Cover and refrigerate for at least 30 minutes to allow flavors to meld and tenderize the chicken.
- Thread Chicken onto Skewers: Take 8 skewers and carefully thread the marinated chicken chunks onto them, dividing evenly.
- Cook the Skewers: Preheat a hot griddle pan, frying pan, or barbecue. Cook the skewers in batches over medium-high heat for about 10-12 minutes, turning frequently to ensure the chicken cooks evenly and is thoroughly done.
- Prepare the Salad: While the chicken cooks, combine the cherry tomatoes, finely chopped red onion, and cucumber chunks in a bowl. Add the remaining lime juice and coriander, then season to taste with salt and pepper. Toss gently to mix.
- Serve: Place the cooked chicken skewers on a serving platter, sprinkle with extra coriander leaves, and accompany with the fresh salad and warmed wholemeal chapatis for a complete meal.

- For extra vegetables, add chunks of courgette, cubes of pepper, or onion wedges onto the skewers before cooking.
