  • 2 tbsp masala paste
  • Handful of coriander leaves, chopped, plus extra to serve

  • Wholemeal chapatis, to serve
  • 250g pack cherry tomatoes, hulled or quartered
  • 1 red onion, finely chopped
  • 1 cucumber, cut into chunks

Instructions

  1. Step 1: In a large bowl, mix together the Greek yogurt, masala paste, half the chopped coriander, half the lime juice, and all the lime zest. Add the chicken chunks and stir well to coat them evenly. If possible, cover and leave to marinate in the fridge for 30 minutes to deepen the flavors.
  2. Step 2: Thread the marinated chicken pieces onto 8 skewers. Cook them in batches on a hot griddle pan, frying pan, or barbecue for about 10-12 minutes, turning occasionally until the chicken is cooked through and slightly charred on the edges.
