- 3/4 cups slivered almonds, toasted
- 1 cup dried blueberries
- 1/2 cup dried mango, cut into 1/4 inch pieces
- 1 cup toasted coconut flakes
- Pinch of sea salt
Wet Ingredients
- 1 cup Simple Truth Organic No Stir Creamy Peanut Butter
- 3/4 cup Simple Truth Organic Honey (or brown rice syrup if vegan)
- 1/4 cup Simple Truth Organic Coconut Oil
Instructions
- Prepare Baking Dish: Line a 9×13 inch baking dish with parchment paper to prevent sticking and make removal easier.
- Combine Dry Ingredients: In a medium bowl, mix the Soulfull Project cereal, toasted slivered almonds, dried blueberries, chopped dried mango, and toasted coconut flakes until well combined.
- Melt Wet Ingredients: In a small saucepan over medium heat, combine the peanut butter, coconut oil, and honey. Stir frequently until the mixture is melted, smooth, and just beginning to bubble. Remove from heat and stir in a pinch of sea salt.
- Mix and Press: Pour the warm peanut butter mixture over the dry ingredients. Stir thoroughly to coat everything evenly. Transfer the mixture to the prepared baking dish and firmly press down using the back of a 1/2 cup measuring cup sprayed with cooking spray to compact the mixture evenly.
- Chill: Cover the dish and refrigerate for at least 1 to 2 hours, allowing the bars to firm up and flavors to meld together.
- Slice and Store: Once set, remove from the fridge, cut into bars of desired size, and store in an airtight container in the refrigerator. Bars will keep fresh for up to two weeks.
