Wet Ingredients
- 1/2 cup (120g) pure natural peanut butter, smooth
- 1/2 cup (175 g) honey
Dry Ingredients
- 1 1/2 cups rolled oats
- 1 cup sultanas
- 1/4 cup desiccated coconut, unsweetened
- 1/2 cup almonds, very roughly chopped
- 1/4 cup pepitas
- 2 tbsp white sesame seeds
- 1/8 tsp salt
- 1/2 tsp cinnamon
Instructions
- Mix Add-ins: In a large microwaveable bowl, combine the rolled oats, sultanas, desiccated coconut, chopped almonds, pepitas, white sesame seeds, salt, and cinnamon using a wooden spoon.
- Prepare Glue: In a saucepan over medium heat, mix peanut butter and honey with a rubber spatula until smooth. Reduce heat to low once combined, and cook carefully, stirring constantly, for about 5 minutes until the mixture thickens to a caramel-like consistency forming little bubbles around the edges. Do not walk away to avoid burning.
- Combine Mixtures: Immediately pour the warm peanut butter and honey mixture over the dry ingredients in the large bowl. Mix thoroughly with the wooden spoon, using smearing and stabbing motions to help incorporate everything. If the mixture becomes too thick, microwave for 20 seconds to loosen and continue mixing.
- Press Into Pan: Line a 20cm (8-inch) square tin with a square piece of paper (no greasing needed). Transfer the muesli mixture into the tin and press down firmly using hands and the wooden spoon to compact the mixture; a firmer press results in chewier bars.
- Set and Cut: Refrigerate the pressed mixture for 2 hours until firm. Once set, cut into 10 bars by slicing in half, then cutting each half into 5 equal bars.

- Note 1: Use smooth natural peanut butter for easier mixing; if separated, mix the oil back in well before using.
