Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 packet taco seasoning
  • 1 cup salsa (for topping)

Vegetables & Seasonings

  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 tsp garlic powder
  • to taste salt
  • to taste pepper

Oils & Garnishes

  • 1 tbsp olive oil
  • optional sour cream (for garnish)
  • optional avocado (for garnish)
  • optional jalapeños (for garnish)

Instructions

  1. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper and cook until softened, about 5 minutes.
  2. Cook Ground Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 7 to 10 minutes.
  3. Season and Simmer: Stir in the taco seasoning, garlic powder, and black beans. Mix thoroughly and let it simmer for 3 minutes. Season with salt and pepper to taste.
  4. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the burritos.
  5. Assemble Burritos: Lay each flour tortilla flat. Evenly distribute the cooked rice on each, then top with the beef mixture, followed by a sprinkle of shredded cheddar cheese.
  6. Roll Burritos: Roll each tortilla tightly, tucking in the sides as you go to securely enclose the filling. Place each burrito seam-side down on a baking sheet.
  7. Bake: Bake the burritos in the preheated oven for approximately 15 minutes, or until the tortillas become golden brown and the cheese has melted.
  8. Serve and Garnish: Remove burritos from the oven and let them cool slightly for a minute. Top with salsa and add optional garnishes such as sour cream, sliced avocado, or jalapeños before serving.

Notes

  • Use fresh ingredients for the best flavor.
  • You can substitute cheddar cheese with a Mexican blend cheese if desired.
  • For a spicier burrito, add more jalapeños or use spicy salsa.
  • Leftover burritos can be stored in the refrigerator for up to 3 days and reheated before serving.
  • For a healthier version, use whole wheat tortillas and brown rice.
