Instructions
- Preheat Oven: Heat the oven to 200C/180C fan/gas 6 to ensure it reaches the proper temperature for baking the turnovers evenly.
- Prepare Pastry: Unravel the puff pastry on the sheet of baking parchment it comes with. Cut the pastry into six equal squares to form the base for each turnover.

- Assemble Turnovers: Divide the soft cheese mixture evenly among the centers of the pastry squares, spreading it in a diagonal line from one corner to the opposite side. Lay a rasher of smoked bacon over the cheese, then scatter the grated mature cheddar or gruyère cheese on top for a rich, melted finish.
- Seal Pastries: Brush the two exposed corners of each pastry square with beaten egg. Fold the pastry diagonally over the filling to join the edges and create a turnover shape. Brush the tops with more beaten egg to help achieve a golden, shiny crust.
- Bake: Place the turnovers, on their baking parchment, onto a baking sheet and bake in the preheated oven for 15-20 minutes, or until the cheese has melted and the pastry is golden and crisp.
- Cool and Serve: Transfer the baked turnovers to a cooling rack and allow them to cool for 5-10 minutes before serving warm, ensuring the filling sets slightly and the pastries are easy to handle.
- Storage: Store any leftovers chilled in an airtight container for two to three days to maintain freshness.
