  • 150ml red wine vinegar

Instructions

  1. Combine ingredients: Place the 400g can of chopped tomatoes, finely chopped red chilli, grated ginger, star anise, caster sugar, red wine vinegar, and a pinch of salt into a pan.
  2. Simmer the mixture: Bring the mixture to a gentle simmer over medium heat, stirring occasionally to dissolve the sugar.
  3. Cook until thick: Continue to simmer the jam for 30 minutes, allowing it to reduce and become thick and glossy. Stir occasionally to prevent sticking and ensure even cooking.
  4. Cool and store: Remove the pan from heat and let the jam cool to room temperature. Once cooled, transfer the jam into a sterilised jar for storage.
  5. Preserve the jam: The jam will keep in the refrigerator for up to two weeks once opened. If unopened and stored properly, it can last up to six months.
