Chicken and Toppings

  • 4 chicken breasts
  • 2 tbsp Cajun seasoning (we used Bart)
  • Drizzle of olive oil
  • 4 pineapple rings, from a can
  • 50g cheddar, grated

Burger Assembly

  • 2 tbsp soured cream
  • 4 burger buns, split and toasted
  • A few lettuce leaves
  • 1 red onion, thinly sliced

Instructions

  1. Prepare the chicken: Heat the grill to medium-high. Place each chicken breast between two sheets of cling film and gently bash with a rolling pin until the meat is of even thickness. This ensures even cooking throughout.
  2. Season the chicken: Rub each chicken breast all over with the Cajun seasoning, drizzle with olive oil, and season lightly with salt and pepper to taste. Place the chicken breasts on a baking tray lined with foil.
  3. Grill the chicken: Place the tray under the grill and cook the chicken for 10 minutes, turning halfway through to cook both sides evenly.
  4. Add pineapple and cheese: After 10 minutes, top each chicken breast with a pineapple ring and sprinkle with grated cheddar cheese. Return the tray to the grill and cook for an additional 2-3 minutes, or until the cheese is golden and bubbling and the chicken is fully cooked through.
  5. Prepare the buns and toppings: Spread a thin layer of soured cream on the base of each toasted bun. Layer with a few lettuce leaves and some thinly sliced red onion.
  6. Assemble the burger: Place the grilled Cajun chicken topped with pineapple and cheese on the prepared bun base, then cover with the bun top. Serve immediately while hot and juicy.

Notes

  • For BBQ cooking, grill chicken breasts for 5 minutes on each side, then add pineapple and cheese and grill for another 2-3 minutes until cheese melts and chicken is cooked.
  • Ensure chicken is cooked through to an internal temperature of 165°F (75°C) for food safety.
  • Use fresh pineapple rings if preferred instead of canned for a fresher taste.
  • For extra heat, add a dash of hot sauce or a sprinkle of chili flakes to the Cajun seasoning.
