Ingredients
Scale
Meatballs
- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup buffalo sauce
- 1/4 cup chopped green onions
- 1/4 cup crumbled blue cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
For Coating
- Additional buffalo sauce
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to ensure the meatballs bake evenly and don’t stick.
- Prepare Meatball Mixture: In a large bowl, combine ground chicken, breadcrumbs, buffalo sauce, chopped green onions, crumbled blue cheese, egg, garlic powder, onion powder, salt, and pepper. Mix everything thoroughly until all ingredients are well incorporated.
- Form Meatballs: Shape the mixture into small meatballs approximately 1 inch in diameter. Place them evenly spaced on the prepared baking sheet to allow for even cooking.
- Bake Meatballs: Place the baking sheet in the preheated oven and bake the meatballs for 15-20 minutes. They should be cooked through, with an internal temperature of 165°F (74°C), and slightly golden brown on the outside.
- Coat with Sauce: Remove the meatballs from the oven and immediately toss them in additional buffalo sauce to coat thoroughly, adding an extra layer of flavor and spiciness.
- Serve: Serve the buffalo chicken meatballs hot, optionally with dipping sauce, extra blue cheese, or chopped green onions for garnish.
Notes
- Use fresh ground chicken for the best texture and flavor.
- If you prefer a spicier meatball, increase the amount of buffalo sauce in the mixture.
- Ensure the meatballs reach an internal temperature of 165°F for safe consumption.
- Breadcrumbs help keep the meatballs moist and give them structure; substitute gluten-free breadcrumbs if needed.
- Optional: Serve with ranch or blue cheese dressing as a dipping sauce.
