Buckeyes Recipe

  • Author: Ethan
  • Total Time: 50 minutes (including freezing times)
  • Yield: Approximately 24 buckeyes 1x

Description

Delicious and classic Buckeyes are a perfect peanut butter and chocolate treat. These bite-sized sweets combine creamy peanut butter, powdered sugar, and butter, dipped in smooth melted chocolate with a signature little circle of peanut butter left uncovered on top. Easy to prepare and ideal for snacking or special occasions.

Ingredients

Scale

Peanut Butter Mixture

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • ¼ cup unsalted softened butter
  • ½ tsp vanilla extract

Chocolate Coating

  • 1 cup semi-sweet chocolate chips
  • ¼ tsp olive oil (plus extra ¼ tsp if needed)

Instructions

  1. Mix Peanut Butter Base: In a large bowl, combine creamy peanut butter, powdered sugar, softened unsalted butter, and vanilla extract. Use an electric mixer to blend until the mixture is smooth and creamy.
  2. Form Balls and Chill: Scoop about 1 tablespoon of the peanut butter mixture and shape into smooth balls, making approximately 24 pieces. Place the balls on parchment paper-lined tray and freeze for 20-30 minutes to firm up.
  3. Melt Chocolate: While the balls chill, melt the chocolate. In a medium bowl, combine semi-sweet chocolate chips with ¼ teaspoon olive oil. Microwave in 30-second intervals, stirring after each, until fully melted and smooth. If chocolate is too thick, stir in an additional ¼ teaspoon of olive oil.
  4. Dip Balls in Chocolate: Remove the peanut butter balls from the freezer. Using two forks or a toothpick, dip each ball into the melted chocolate, coating well but leaving a small circle of peanut butter visible on top to create the classic Buckeye appearance. Place dipped balls back on the parchment paper.
  5. Freeze to Set: Return the chocolate-dipped Buckeyes to the freezer and chill for 5 minutes to allow the chocolate coating to set.
  6. Store Properly: Once set, keep the Buckeyes stored in the refrigerator until ready to serve to maintain freshness and texture.

Notes

  • Ensure peanut butter is creamy for smooth mixing and forming.
  • Use softened butter at room temperature to blend easily with peanut butter.
  • The little circle of peanut butter left uncovered on top is key to the traditional Buckeye look.
  • If chocolate thickens too much during melting, add a little more olive oil for smooth dipping.
  • Keep Buckeyes refrigerated to prevent melting and preserve texture.
  • Using parchment paper prevents sticking and makes cleanup easier.
