Peanut Butter Mixture

Instructions
- Mix Peanut Butter Base: In a large bowl, combine creamy peanut butter, powdered sugar, softened unsalted butter, and vanilla extract. Use an electric mixer to blend until the mixture is smooth and creamy.
- Form Balls and Chill: Scoop about 1 tablespoon of the peanut butter mixture and shape into smooth balls, making approximately 24 pieces. Place the balls on parchment paper-lined tray and freeze for 20-30 minutes to firm up.
- Melt Chocolate: While the balls chill, melt the chocolate. In a medium bowl, combine semi-sweet chocolate chips with ¼ teaspoon olive oil. Microwave in 30-second intervals, stirring after each, until fully melted and smooth. If chocolate is too thick, stir in an additional ¼ teaspoon of olive oil.
- Dip Balls in Chocolate: Remove the peanut butter balls from the freezer. Using two forks or a toothpick, dip each ball into the melted chocolate, coating well but leaving a small circle of peanut butter visible on top to create the classic Buckeye appearance. Place dipped balls back on the parchment paper.
- Freeze to Set: Return the chocolate-dipped Buckeyes to the freezer and chill for 5 minutes to allow the chocolate coating to set.
- Store Properly: Once set, keep the Buckeyes stored in the refrigerator until ready to serve to maintain freshness and texture.
