Ingredients You’ll Need

Brownie Bites come together quickly, thanks to a handful of simple, everyday ingredients. Each one plays a vital role, contributing to that unmistakable chocolatey flavor and chewy-centred texture we all crave.

  • Butter: Unsalted butter keeps the brownies rich and moist, while the slight melt adds glossy texture to the batter.
  • Granulated sugar: Sweetens the bites, balances out the cocoa, and helps produce a delicate crust on top.
  • Salt: Even a small pinch of salt enhances chocolate’s flavor and rounds out the sweetness.
  • Eggs: These add structure and help the bites set with just the right chewiness — don’t skip!
  • Vanilla extract: A dash deepens and rounds out the chocolatey goodness.
  • All-purpose flour: The base that binds everything together without making the bites too dense.
  • Dutch process cocoa powder: Gives a deep, dark chocolatey flavor and gorgeous color.
  • Mini semi sweet chocolate chips: These melt into little pockets throughout each Brownie Bite, making every mouthful extra decadent.
  • Non-stick cooking spray & extra cocoa powder: Makes sure your bites pop right out of the pan — trust me, you don’t want to miss a crumb.

How to Make Brownie Bites

Step 1: Preheat and Prepare the Pan

Start off by preheating your oven to 325 degrees Fahrenheit. Grab your trusty 24-cup mini muffin pan, give each cup a generous hit with non-stick spray, and dust with a little cocoa powder. This not only ensures easy removal, it also gives the bites an extra chocolatey edge around the edges.

Step 2: Melt the Butter

Chop up your butter into tablespoon-sized pieces and place them in a large, microwave-safe mixing bowl. Gently melt the butter in the microwave until just fluid — this helps it blend easily. Let it cool for a minute or two; you want it warm, not hot, so it doesn’t scramble your eggs later on.

Step 3: Mix Sugar, Salt, Eggs, and Vanilla

Add the granulated sugar and salt right into the slightly cooled melted butter. Whisk well, then crack in both eggs and pour in the vanilla extract. Whisk again until the mixture becomes glossy and everything is fully combined; this is where some of that signature brownie crackle starts.

Step 4: Incorporate Dry Ingredients

Sift in the flour followed by the Dutch process cocoa powder (no lumps, please!). Gently stir the mixture together, scraping the bottom and sides so every bit of cocoa and flour disappears. You’re aiming for a thick, smooth brownie batter.

Step 5: Stir in Chocolate Chips

Now comes the fun part — toss in your mini chocolate chips and give everything a final stir. These chips will stud your Brownie Bites with gooey, chocolatey pockets after baking.

Step 6: Fill the Muffin Pan

Using a 1.5 tablespoon scoop (a #40 cookie scoop works perfectly!), portion the batter into each prepared muffin cup. Fill each one nearly to the top. Don’t worry, they’re not major risers — but that means you’ll get those perfect brownie edges on every bite.

Step 7: Bake to Perfection

Slide the pan into your preheated oven and bake for 15 to 17 minutes. To test for doneness, insert a toothpick into the center of a bite; it should come out without raw batter sticking to it, though a few moist crumbs are perfect. Overbaking means dry bites — keep a close eye!

Step 8: Cool and Serve

Let the bites cool in the pan for about 15 minutes. This rest helps the bites firm up just enough so they hold together when you gently pop them out. Transfer them to a wire rack to finish cooling, and if you’re feeling fancy, add a swirl of your favorite cream cheese frosting.

How to Serve Brownie Bites

Garnishes

Dress up your Brownie Bites with a dusting of powdered sugar, a miniature swirl of cream cheese frosting, or a drizzle of melted chocolate. Fresh berries or a sprinkle of flaky sea salt also make each bite irresistible, adding a pop of color or a little extra flavor.

Side Dishes

Pair these Brownie Bites with a scoop of vanilla (or coffee!) ice cream for an instant dessert upgrade. For a lighter touch, serve them alongside a bowl of seasonal fruit or a crisp fruit salad — their rich chocolate pairs beautifully with citrus or berries.

Creative Ways to Present

Try stacking your Brownie Bites on a tiered dessert stand for parties, or package them in decorative boxes for delightful edible gifts. For a special occasion, skewer a bite onto a lollipop stick and dip in melted chocolate for the cutest brownie pops ever.

Make Ahead and Storage

Storing Leftovers

Once your Brownie Bites have cooled completely, transfer them to an airtight container. They’ll keep at room temperature for up to 3 days — that’s if they last that long! If you’ve frosted them, store in the fridge to keep the topping fresh.

Freezing

To freeze, arrange cooled Brownie Bites in a single layer on a baking sheet until firm, then transfer to a zip-top bag or container. They stay delicious for up to 2 months. Just thaw at room temp whenever a chocolate craving strikes.

Reheating

If you like your brownies a little warm and gooey, pop a Brownie Bite in the microwave for 10 to 15 seconds. The chocolate chips get melty and the center softens, making it the ultimate cozy treat—especially with a scoop of ice cream!

FAQs

Can I use regular cocoa powder instead of Dutch process?

Yes, you can substitute natural cocoa powder in a pinch, but Dutch process gives these Brownie Bites a deeper, smoother chocolate flavor and darker color. The recipe will still work either way, but the taste will shift slightly.

Do I need to use mini chocolate chips?

Mini chips blend beautifully into the bite-sized brownies, but regular chocolate chips or even chopped chocolate bars work well if that’s what you have. Just be sure they’re evenly distributed for maximum gooeyness!

What if I don’t have a mini muffin pan?

You can use a regular muffin pan and fill each cup halfway, though the baking time will increase slightly. Keep a close eye on them and check early to avoid overbaking.

Can I double the recipe?

Absolutely! This recipe scales up easily — just double all ingredients and use two mini muffin pans, or bake in batches. Perfect for parties and sharing with friends.

Is it okay to add nuts or other mix-ins?

Of course! Chopped walnuts, pecans, a swirl of peanut butter, or even dried fruit are all tasty additions. Just keep mix-ins to about half a cup to maintain the perfect Brownie Bites texture.

Final Thoughts

If you’re searching for a treat that combines ease, classic chocolate flavor, and endless possibilities for creativity, these Brownie Bites need to be on your baking list. They’re fun to make, devilishly good to eat, and almost guaranteed to disappear fast. Give them a try — your kitchen (and everyone who visits it) will thank you!
