  • 2 Tablespoons extra virgin olive oil
  • 1 head broccoli, chopped into 1-inch pieces
  • 3 large eggs
  • 1/3 cup milk
  • Salt and pepper to taste
  • 2 ounces feta or goat’s cheese, crumbled
  • 1/4 cup Parmesan cheese or other strong cheese

Instructions

  1. Prepare: Preheat oven to 400°F / 200°C. Grease a tart pan with butter.
  2. Mix: Combine cooked brown rice, egg, and cheddar. Press mixture into tart pan.
  3. Bake: Bake crust for 15 minutes. Let cool.
