  • 1 tbsp vegetable or sunflower oil
  • 2 eggs
  • 2 small naan breads
  • 4 tbsp low-fat cream cheese
  • 2 tbsp mango chutney
  • 1 avocado, halved and sliced
  • ½ lime, juiced
  • 1 green chilli, finely sliced
  • small handful coriander, leaves picked

Instructions

  1. Preheat Oven and Heat Oil: Heat your oven to 200°C (180°C fan)/gas mark 6 to warm the naan breads later. While the oven is heating, add the vegetable oil to a pan over medium heat to prepare for frying the eggs.
  2. Fry the Eggs: Crack the eggs into the hot pan and fry them until the whites are set but the yolks remain runny or cooked to your preference.
  3. Warm the Naan Breads: Place the naan breads on a baking tray and warm them in the preheated oven while the eggs are cooking, approximately 3-5 minutes until soft and warm.
  4. Spread Cream Cheese and Drizzle Chutney: Remove the warm naans from the oven and spread each with 2 tablespoons of low-fat cream cheese. Drizzle each with 1 tablespoon of mango chutney evenly on top.
  5. Assemble the Toppings: Place a fried egg on each naan, then layer with the sliced avocado. Drizzle the avocado with the juice of half a lime to add brightness and prevent browning.
  6. Add Chilli and Coriander: Scatter the finely sliced green chilli and fresh coriander leaves over the assembled naans for a fresh, spicy finish.
  7. Season and Serve: Season each naan with salt and pepper to taste, then serve immediately and enjoy your flavorful breakfast naan.
