  • 2 x 100g bars 70% dark chocolate, chopped
  • 85ml double cream
  • 1 tsp vanilla extract

Instructions

  1. Melt the chocolate mixture: Place the chopped dark chocolate, double cream, and vanilla extract in a pan. Heat very gently over low heat, stirring occasionally until everything is fully melted and smooth. Be careful not to let the mixture boil.
  2. Chill until firm: Remove the pan from heat and allow the mixture to cool to room temperature. Then cover and chill in the refrigerator for about 90 minutes or until the chocolate mixture is firm enough to shape.
  3. Shape the truffles: Use a mini ice cream scoop or a teaspoon to portion out the chocolate mixture. Roll each portion quickly between your palms to form 24 small, even balls.
  4. Dust the truffles: Roll the truffles in cocoa powder or grated white chocolate to coat them evenly. This gives a beautiful finish and adds texture.
  5. Final chilling: Refrigerate the coated truffles until ready to serve. You can prepare them up to 4 days ahead or freeze them for up to 1 month. When thawing frozen truffles, do so in a cool place and dust with extra cocoa if needed for freshness.
