  • 1 tablespoon Fresh Mint leaves
  • 1 tablespoon Truvia® Sweet Complete® Granulated All-Purpose Stevia Leaf Sweetener

Instructions

  1. Toast the Baguette: Lightly toast whole wheat baguette slices under a broiler or in a toaster oven until golden and crisp. Once toasted, set them aside to cool slightly.
  2. Prepare Sweetened Ricotta: Whisk together the part-skim ricotta cheese and 1 tablespoon of Truvia® Sweet Complete® Granulated Stevia until the mixture is light and fluffy. Refrigerate it until you’re ready to assemble the toasts.
  3. Mix the Berries: In a medium bowl, gently toss together the fresh strawberries, blueberries, cherries, blackberries, fresh mint leaves, and the remaining 1 tablespoon of Truvia®. This allows the berries to get evenly sweetened.
  4. Let the Berry Mixture Rest: Allow the berry mixture to sit at room temperature for at least 10 minutes. This resting time releases fruit juices, enhancing flavor and juiciness.
  5. Assemble the Bruschetta Toasts: Spread a generous layer of the whipped ricotta mixture onto each toasted baguette slice. Then top each with a spoonful of the berry mixture. Garnish with additional mint leaves if desired and serve immediately.
