Main Ingredients
- 16 ounces tortilla chips
- 2 cups diced BBQ chicken
- 8 ounces shredded cheddar cheese
- 1 cup black beans (canned, drained and rinsed)
- 1 cup corn (canned, drained)
- ¼ cup BBQ sauce
- 2 tablespoons chopped cilantro
Toppings
- ¼ cup pico de gallo
- ¼ cup guacamole
- ¼ cup sour cream
Instructions
- Preheat Oven: Preheat your oven to 400˚F (200˚C) to prepare for baking the nachos evenly and melting the cheese perfectly.
- Assemble Nachos: Spread the corn tortilla chips in an even layer on a baking sheet. Sprinkle half of the shredded cheddar cheese over the chips, then distribute the diced BBQ chicken, black beans, and corn evenly on top. Finish this layer by sprinkling the remaining cheese over everything.
- Bake: Place the baking sheet in the preheated oven and bake for 8 to 12 minutes until the cheese has melted thoroughly and the chip edges turn golden and slightly crispy.
- Add Toppings: Remove the nachos from the oven and immediately drizzle the BBQ sauce over the top. Sprinkle chopped cilantro evenly, then add dollops of sour cream, guacamole, and pico de gallo either centrally or on the side for dipping as preferred.
Notes
- To make it spicier, add sliced jalapeños or a dash of hot sauce.
- Use fresh BBQ chicken or leftover grilled chicken for the best flavor.
- Swap cheddar cheese for pepper jack for a spicier twist.
- For a vegetarian version, omit the chicken and add extra beans or grilled vegetables.
- Serve immediately to keep chips crispy.
