  • 1 clove Garlic
  • 1 tablespoon Pure Maple Syrup

Instructions

  1. Freeze the Bacon: Freeze the 2 pieces of bacon first; this makes it easier to chop when you’re ready to cook.
  2. Prepare the Potatoes: Wash the Yukon Gold potatoes and cut them into square pieces. To prevent browning, place the cut potatoes in a bowl of water until needed.
  3. Heat the Oil: Warm 1 tablespoon of olive oil in a large skillet over medium-high heat, tilting the skillet to spread the oil evenly.
  4. Cook Potatoes: Drain the potatoes and add them to the hot skillet. Season with salt, ground black pepper, and Old Bay® seasoning to taste. Cook for about 10 minutes, stirring often until the potatoes are browned and cooked through.
  5. Add Bacon: Chop up the frozen bacon and add it to the skillet with the potatoes. The bacon will render fat that helps cook and flavor the potatoes. Toss everything together well.
  6. Add Garlic and Parsley: Once the bacon is cooked, add the minced garlic to the pan and toss. Adjust heat as needed. Cook the garlic until fragrant, about one minute, then add fresh parsley and toss again.
  7. Caramelize with Maple Syrup: Just before serving, drizzle 1 tablespoon of pure maple syrup over the potatoes and toss. Let it cook for another minute to allow the syrup to caramelize the potatoes.
