  • 1 clove Garlic

  • 1/2 cup Nonfat Plain Greek Yogurt
  • 1 dash Milk (optional, to thin sauce)

Instructions

  1. Prepare Sweet Potatoes: Peel the sweet potatoes and cut them lengthwise into 1/4-inch (0.6 cm) thick matchsticks. Aim for thinner fries if possible for crispier results.
  2. Soak Fries: Place the cut sweet potato matchsticks into a bowl of cold water and refrigerate for at least 1 hour up to overnight. This helps remove excess starch. After soaking, drain and pat the fries dry; they don’t need to be perfectly dry.
  3. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for baking the fries to crispiness.
  4. Coat with Cornstarch: Put 1 tablespoon of cornstarch into a plastic bag, add the fries, blow some air into the bag, and shake to coat fries lightly and evenly. Add a bit more cornstarch if needed to achieve an even coating.
