For the Chicken Nuggets:
- 4 large skinless boneless chicken breasts (about 2 pounds)
- 1 cup bread crumbs (use GF crumbs for gluten-free version)
- ½ cup all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 3 teaspoons pepper
- 2 teaspoons salt
- 3 teaspoons minced thyme
- 2 teaspoons cayenne pepper
- 2 large eggs
- 1 cup milk
For Baking:
- 3 tablespoons olive oil
Instructions
- Preheat the oven: Preheat the oven to 400°F (204°C).
- Prepare the chicken: Fillet the chicken breasts and cut them into 1-2 inch cubes. Set aside.
- Prepare the breading: In a medium mixing bowl, combine the bread crumbs, flour, garlic powder, onion powder, pepper, salt, thyme, and cayenne pepper. Stir until combined. Set aside.
- Prepare the egg mixture: In a separate bowl, whisk together the eggs and milk until combined.
- Coat the chicken: Dip chicken pieces in the egg mixture, then coat with the breading mixture. Place on a baking pan.
- Bake: Drizzle the breaded chicken with olive oil and bake at 400°F for 25-30 minutes until crispy and cooked through.
- Serve: Let cool slightly before serving.
