Description

This Avgolemono Soup is a comforting and flavorful dish that is Whole30, Keto, and Grain-Free. With a rich chicken broth base, tender chicken, and a lemony egg mixture, this soup is both satisfying and nutritious.

For the Soup:

  • 2 tbsp olive oil
  • 1 large sweet onion (finely chopped)
  • 2 stalks celery (finely chopped)
  • 2 medium carrots (finely chopped)
  • 8 cups chicken bone broth
  • 1 tsp kosher salt
  • ½ tsp ground pepper
  • ½ tsp dried oregano
  • 1 lb boneless skinless chicken breast
  • 2 cups frozen cauliflower rice (about 5 oz.)
  • fresh dill or parsley (chopped, to taste)
  • fresh lemon zest (to taste)

For the Egg Mixture:

  • 3 large eggs
  • ¼ cup fresh lemon juice (from 23 lemons)

Instructions

  1. Saute Vegetables: Heat a dutch oven or large soup pot over medium-high heat. Add the onion, celery, and carrots. Saute until onions are translucent and carrots and celery soften.
  2. Simmer Broth: Pour in the chicken broth, season with salt, pepper, and oregano. Add the bay leaf and bring to a simmer. Add chicken breasts and simmer until cooked through. Shred chicken.
  3. Temper Eggs: Whisk eggs and lemon juice. Slowly add hot broth to temper the eggs.
  4. Finish Soup: Return shredded chicken and cauliflower rice to the pot. Simmer until rice is warmed. Stir in tempered egg mixture. Adjust seasoning. Remove bay leaf.
  5. Serve: Ladle into bowls and garnish with parsley or dill and lemon zest.

Notes

  • You can adjust the amount of lemon juice and seasoning to suit your taste preferences.
  • For a thicker soup, add more cauliflower rice.
  • This soup can be stored in the refrigerator for up to 3 days. Reheat gently on the stove.
