Ingredients
Scale
Cookie Dough
- 1 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup apple cider
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup diced apples
Glaze
- 1/2 cup powdered sugar
- 1–2 tbsp apple cider
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
- Cream Butter and Sugars: In a large bowl, use a mixer to beat the softened butter, brown sugar, and granulated sugar until the mixture becomes light and fluffy, creating a smooth base for the dough.
- Add Wet Ingredients: Mix in the egg, vanilla extract, and apple cider until fully incorporated and the batter is smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt to evenly distribute the spices and leavening agents.
- Mix Dry into Wet: Gradually add the dry ingredients to the wet ingredients, mixing until just combined to avoid overworking the dough which could toughen the cookies.
- Fold in Apples: Gently fold the diced apples into the dough with a spatula to ensure even distribution without breaking the fruit.
- Shape and Bake: Using a spoon or cookie scoop, place dollops of dough onto the prepared baking sheet, spacing appropriately. Bake in the preheated oven for 10–12 minutes until the edges are lightly golden and the centers are set.
- Prepare Glaze: While the cookies bake, combine the powdered sugar with 1–2 tablespoons of apple cider in a small bowl to form a smooth glaze.
- Glaze Cookies: After removing the cookies from the oven and allowing them to cool slightly, drizzle or brush the apple cider glaze over the tops for added sweetness and moisture.
Notes
- Make sure butter is softened at room temperature for easier creaming and better texture.
- Use crisp, tart apples like Granny Smith for the best flavor and texture contrast.
- Do not overmix the dough after adding the flour to keep cookies tender.
- Adjust glaze consistency by adding more apple cider if too thick or more powdered sugar if too thin.
- Cookies can be stored in an airtight container at room temperature for up to 3 days.
