Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F (180 degrees C) to prepare for baking the cake.
  2. Prepare Pan: Spray a 9-inch springform pan with non-stick baking spray to ensure the cake doesn’t stick after baking.
  3. Make Cake Batter: In a stand mixer fitted with a paddle attachment, cream together 1/2 cup butter and 1/2 cup granulated sugar until light and fluffy. Add 2 large eggs, one at a time, mixing well after each. Then add 1 1/4 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, and 1/4 teaspoon salt.   5. Make Streusel Topping: In a food processor, combine 3/4 cup all-purpose flour, 1/4 cup oats, 1/2 cup granulated sugar, 1/4 teaspoon salt, and 7 tablespoons butter. Pulse until the mixture resembles coarse bread crumbs. Sprinkle the streusel evenly over the apples.
  6. Bake the Cake: Place the pan in the oven and bake for about 1 hour, or until the top is golden and toasted. Remove from oven and let the cake cool in the pan for 10 minutes. Then run a knife around the edges and remove the sides of the springform pan.
