Fresh Herb Mixture:
- 1 cup packed fresh flat-leaf parsley, finely chopped
- ½ cup packed fresh cilantro, finely chopped
- ¼ cup packed fresh oregano, finely chopped
Aromatics:
- 1 small shallot, finely diced
- 1 small red chili pepper, deseeded & finely diced
- 6 cloves of garlic, finely chopped
Liquid & Seasoning:
- 1 cup extra virgin olive oil
- ¼ cup red wine vinegar
- Kosher salt & fresh ground black pepper, to season
Instructions
- Hand-chop/dice all dry ingredients: Finely chop and dice all herbs, shallot, pepper, and garlic. Combine in a bowl or jar.
- Add the liquid & season: Cover with olive oil and vinegar, season with salt and pepper. Stir well.
- Store in the fridge: Cover and refrigerate for flavors to meld. Let sit at room temperature before using.
